Sarah the Elf triple-checked the Nice List and decided to give everyone an early Christmas present. Here are two recipes for easy caramel turtles and marshmallow fudge:
Caramel Turtles:
1 bag of chocolate caramels
12 oz of square shaped pretzels
1 package of pecans
5 oz white chocolate
5 oz dark chocolate
Toast the pecans at 350 degrees for 5 minutes.
Cover a baking sheet with parchment paper and set the pretzels down in lines. Set one chocolate caramel atop each pretzel.
When the pecans have cooled slightly, press one into each chocolate caramel. They should become soft, but not melt.
Melt the white and dark chocolate, separately, on the stovetop.
Using a spoon, drizzle the white and dark chocolate in stripes on the candies.
Cool for 1 hour in the refrigerator before serving.
Marshmallow Fudge:
3 cups white sugar
¾ cup butter
2/3 cup evaporated milk
1 (12 oz) package semisweet chocolate chips
1 (7 ounce) jar marshmallow crème
1 cup chopped walnuts (or non-melting mix-in)
1 teaspoon vanilla extract
Grease a pan or muffin tin. Set aside.
Mix sugar, butter, and evaporated milk in a large saucepan over medium heat, stirring to dissolve sugar.
Bring mixture to a full boil for 5 minutes, stirring constantly,
Remove from heat and stir in chocolate chips until thoroughly melted and combined.
Beat in marshmallow crème, vanilla and chopped walnuts. (Can use a whisk)
Transfer fudge to the prepared pan and let cool before cutting into squares.
